Potato Cakes and Grilled Bacon

Use up leftover mashed potato to make hot, oat-coated potato cakes topped with crispy bacon to start your day off the right way.


  • 1kg floury Red Tractor Assured potatoes diced 
  • 75g porridge oats
  • 50g Red Tractor Assured flour
  • Red Tractor Assured rapeseed oil for shallow frying
  • Red Tractor Assured smoked back bacon, allow 2 rashers per person grilled


  1. Cook the potatoes in boiling water for 10-15 minutes until tender.
  2. Drain, return to the pan and mash, allow to cool slightly.
  3. Stir in 50g oats and flour, and season well.
  4. Press into 8 round potato cakes and coat in the remaining oats.
  5. Heat the oil in a large frying pan and fry the potato cakes 4 at a time, for 2 minutes each side.
  6. Serve topped with grilled bacon.


Add grated cheese e.g. Cheddar, and herbs to the potato mix for extra flavour and serve with scrambled eggs. It’s ideal to using up leftover mashed potato.
