Spinach and Goat's Cheese Stuffed Mushrooms and Chips

This healthy dish makes the most of a variety of homemade recipes, from chips to stuffed mushrooms, this dish is sure to impress.

Serves: 6

Preparation Time: 15 minutes
Cooking Time:  45 minutes

Ingredients: 


For the chips:
  • 6 large fluffy potatoes, such as Maris Piper, King Edward or Desirée (about 1.5kg)
  • 2 tbsp olive oil
For the mushrooms:
  • 6 large Portobello mushrooms (fresh)
  • 2 tbsp olive oil
  • 25g butter
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 50g finely chopped walnuts
  • 150g bag fresh spinach
  • 100g goat's cheese, crumbed
  • Seasoning

Method:

  1. Preheat the oven to 200°C/fan oven 180°C / Gas Mark 6. 
  2. For the chips, cut the potatoes, without peeling them into fat cut chips, and lightly coat in a little olive oil on a non stick roasting tray. Cook for 30 minutes turning occasionally. When cooked the chips should be golden brown and crisp with a light fluffy centre.
  3. For the mushrooms, remove the stems and place them on a large baking tray. Drizzle with oil. Add finely chop stems, sprinkling them on top.
  4. Heat the butter and oil in a large pan, add the chopped mushrooms, onion and garlic and cook for 3 minutes. Stir in the walnuts, spinach, and season. Cook until the spinach is just wilted. Spoon into the mushroom. Sprinkle on the cheese.
  5. Cook for 12-14 minutes or until the mushrooms are tender.
