British Summer Salad Recipe

Tasty and colourful, this summer salad recipe is packed full of British ingredients perfect for a quick and easy lunch.


  • 4 Red Tractor Assured egg
  • 750g Red Tractor Assured baby new potatoes, halved
  • 250g green beans, trimmed
  • 1 tbsp Apple cider vinegar
  • 1 tsp Wholegrain mustard
  • 1 tsp clear honey
  • 2 tbsp Red Tractor assured rapeseed oil
  • 250g Red Tractor assured tomatoes, halved
  • 100g Red Tractor assured radishes, sliced thinly
  • Handful of salad cress


  1. Cook the potatoes in a pan of boiling water for 8–10 minutes until tender.
  2. After about 6-7 minutes, add the beans and cook for a further 3 minutes until both potatoes and beans are tender.
  3. Meanwhile, boil the eggs in a pan of simmering water for 9 minutes.
  4. Drain and cool the potatoes and beans under running water then transfer to a serving platter.
  5. Drain and cool the eggs. Shell and halve.
  6. Whisk the vinegar, mustard and honey together with a fork, then whisk in the oil until well blended.
  7. Arrange the tomatoes, radishes and eggs on top of the beans and potatoes. Drizzle over the mustard dressing and scatter with cress to serve.
