Chip Dipping Platter Recipe

Everyone loves chips, so why not use this homemade chip recipe with a range of sauces to make a side dish that the kids will love!

Serves: 4-6

Preparation Time: 30 minutes
Cooking Time: 40 minutes

Ingredients:


For the chips:
  • 600g fluffy potatoes such as King Edward or Maris Piper
  • 2-3 tbsp sunflower oil

Optional sauces:

For the paprika mayonnaise:
  • 150g mayonnaise
  • 1tsp smoked paprika (or add more to taste)
  • ½ tsp ground cumin

For the sweet chilli sauce:
  • 2 - 3 garlic cloves, crushed
  • 6 long red chillies, including seeds, finely chopped
  • 1tbsp fish sauce (optional)
  • 100g caster sugar
  • 100ml rice vinegar

For the curry sauce:
  • 2 tbsp sunflower oil
  • 1 onion, finely chopped
  • 1 apple, peeled, cored and finely diced
  • 1 tbsp curry paste
  • 2 tbsp plain flour
  • 1 tbsp tomato purée
  • Lemon juice to taste
  • Salt and pepper

Method: 

  1. Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
  2. For the chips, peel and cut the potatoes into thin chips and lightly coat in a little sunflower oil and place in a non-stick roasting tray. Place in the oven and cook for 20 minutes, turning occasionally.
  3. For the paprika mayonnaise, mix together the mayonnaise, paprika and cumin.  
  4. For the sweet chilli sauce, place the chilli and garlic in a pan with the remaining ingredients and 100ml of water. Bring the mixture to the boil and continue to boil for five minutes or until the mixture has reduced to a syrup-like consistency. Set aside to cool.
  5. For the curry sauce, heat the oil and fry the onion until soft but not coloured.  Add the apple and curry paste and continue frying until the apple is beginning to break down. Stir in the flour, cook for two minutes and then remove from the heat and add 500ml water, tomato purée, salt, pepper and lemon juice to taste. Return to the heat and simmer for 15 minutes until the sauce has thickened.
  6. When the chips are cooked serve alongside your choice of dips and spring onions and cherry tomatoes.
