Red Tractor Pancakes with Toffee Apple Slices

Sticky toffee apples aren't just for Halloween, you can also put them on your pancakes this Shrove Tuesday!

Preparation Time: 30 mins Cooking Time: 15 mins Serves: 10


For Pancakes

  • 120 grams of plain Red Tractor flour
  • Pinch of salt
  • 2 eggs
  • 300ml Red Tractor milk
  • Red Tractor butter or for a healthier option try rapeseed oil

For baked apple slices

  • 3-4 tbsp Silverspoon caster sugar
  • 2-3 apples
  • Cinnamon
  • Knob of butter 


For Pancakes

  1. Whisk the flour, salt, eggs and milk to form a batter until the mixture is smooth. Ideally leave to stand for 30 minutes.
  2. Lightly grease an 18cm/7 inch pan with the butter or oil. Spoon 2 tablespoons of batter in to the heated pan. Swirl the pan so that the batter covers the surface evenly. Cook for 1 minute each side.
  3. Transfer to a plate and keep warm while you cook the remaining pancakes.


For Toffee apple slices

  1. Heat a frying pan over a low heat and melt a knob of butter.
  2. Peel, core and slice the apples in to segments and place evenly across the frying pan.
  3. Sprinkle with sugar and cinnamon.
  4. Cook the slices on each side for 3-4 mins or until they have gone soft and brown.
  5. Spoon the cooked apple slices onto a warm pancake folded into quarters and spoon the toffee apple juices from the pan on top.
