Quick Chicken Balti Recipe

You can't go wrong with a midweek curry, and this quick chicken recipe packs in all of the flavours in an easy to make recipe that can feed 4.

Serves: 4

Ingredients:

  • 25g/1oz Red Tractor Country Life English butter
  • 1 tbsp Red Tractor rapeseed oil
  • 500g/1lb 2oz Red Tractor chicken breasts, chopped into chunks
  • 1 Red Tractor red onion, sliced
  • 2 garlic cloves, crushed
  • 1 Red Tractor carrot, chopped
  • 3 tbsp Balti curry paste
  • 400g can chopped tomatoes
  • 100g/4oz Red Tractor mushrooms, sliced
  • 150ml (1/4 pint) chicken stock
  • 100g/4oz Red Tractor peas
  • 2 tbsp chopped fresh Red Tractor mint or coriander
  • 2 tsp lemon juice
  • 100ml/4fl oz Red Tractor single cream
  • Basmati rice or warm naan bread, to serve

Method: 

  1. Heat the butter and vegetable oil in a large frying pan and add the chicken, cooking it over a high heat for 3-4 minutes until sealed and browned. Add the onion, garlic, carrot and curry paste, stirring together for another 2 minutes or so.
  2. Add the tomatoes, mushrooms and stock. Bring up to the boil, then reduce the heat and simmer, without a lid, for 20-25 minutes, adding the peas and mint or coriander for the final 5 minutes.
  3. Stir the lemon juice through the single cream and leave it to stand for 5 minutes – this will thicken and give it a fresh soured flavour.
  4. Serve the curry with cooked basmati rice or warm naan bread, with some of the cream spooned on top.

Cook’s tip: Make the recipe with Red Tractor whole chicken legs instead of chunks of chicken breasts, letting them simmer gently for 40 minutes to make sure they are tender.
