Pork and Bean Casserole

This 6 step pork casserole recipe is simple to make, using a variety of vegetables to create a dish that is sure to warm you on a winter's day.

Serves: 4

Ingredients:

  • 1 tbsp Red Tractor rapeseed oil
  • 500g/1lb 2oz Red Tractor pork shoulder steaks, cut into chunks
  • 2 Red Tractor onions, sliced
  • 2 garlic cloves, crushed
  • 2 Red Tractor carrots, sliced
  • 1 Red Tractor eating apple, cored and chopped (though not peeled)
  • 400g can chopped tomatoes
  • 2 x 400g cans haricot beans, rinsed and drained
  • 300ml/1/2 pint chicken or vegetable stock
  • 2 tbsp tomato puree
  • 1 tbsp Worcestershire sauce
  • 1 tbsp clear honey
  • 1 tsp grated fresh root ginger (or use ½ tsp ground)
  • 2 tsp dried thyme
  • Salt and freshly ground black pepper
  • 2 tbsp chopped fresh Red Tractor parsley

Method: 

  1. Preheat the oven to 180°C, 350°F, Gas 4.
  2. Heat the vegetable oil in a large flameproof casserole dish and add the chunks of pork, cooking them over a high heat for 3-4 minutes until seared and browned.
  3. Add the onions, garlic, carrots and apple. Cook, stirring, for 2-3 more minutes.
  4. Add the tomatoes, haricot beans, stock, tomato puree, Worcestershire sauce, honey, ginger and thyme. Season.
  5. Put the lid on and transfer to the oven to cook for 1 ½-2 hours, until the pork is tender.
  6. Serve with mashed Red Tractor potatoes and sprinkle with chopped fresh parsley.
