Pork and Apple Burgers with Plum Relish

There’s no need to buy ready-made burgers when they can be this simple to make and delicious to eat with our pork and apple recipe.

Plus, you can rest assured that when you have made them with Red Tractor ingredients, they are produced with responsible standards and sourced from British, independently-inspected Red Tractor farms.

Serves: 6 small or 4 large burgers

Ingredients: 

For the burgers
  • 450g minced Red Tractor pork(
  • 1 large or 2 small Red Tractor apples - Cox works well - grated on the large holes of a grater
  • 1 handful of dried breadcrumbs
  • 2 tablespoons of fresh thyme leaves, picked from the stalks
  • 1 teaspoon Dijon mustard
  • Plenty of salt and pepper

For the relish:
  • 1 tablespoon Red Tractor rapeseed oil
  • 1 Red Tractor onion, finely chopped
  • 2 tablespoons peeled and grated root ginger
  • 4 Red Tractor plums, stones removed and cut into dice
  • 4 teaspoons brown sugar
  • 1 teaspoon cider vinegar
  •  Zest of one orange
  •  Salt and pepper

Burger buns and your choice of garnish to serve

Method:

  1. Place all of the burger ingredients in a medium bowl and mix with your hands  - or a fork, if you are squeamish - until evenly combined.
  2. To check the seasoning, make a tiny little patty of meat and quickly fry it until it is cooked. Taste and adjust the seasoning accordingly.
  3. Shape into four to six, evenly-sized burgers. Put in the fridge to firm up.
Meanwhile, make the relish:
  1. Heat the oil in a small saucepan. Add the onion and ginger and cook gently until the onion is soft - around eight minutes.
  2. Add the plums, sugar and 50ml cold water. Cook until the plums have softened which will take around ten minutes.
  3. Add the vinegar and orange zest, and cook for a further minute.
  4. Season to taste.
  5. You can keep this in a jar in the fridge for up to two weeks.
Then grill or fry the burgers, depending on your preference. Serve with the relish, in burger buns. Enjoy!
