Sausages & Mash Recipe with a twist

We all enjoy a hearty bangers and mash dish, but why not try something new with a few surprise ingredients ...

Serves: 4


  • 12 Red Tractor Pork sausages
  • 4 Red Tractor pak choi cut in half lengthwise
  • 2 large Red Tractor onions finely sliced
  • 2 garlic cloves 
  • 1tsp honey
  • 2tsp cocoa powder
  • 500g Red Tractor Maris Piper or King Edward Potatoes, peeled and quartered
  • 6tbsp Red Tractor milk
  • 50g Red Tractor butter
  • Salt and pepper
  • Red Tractor rapeseed oil


  1. Boil the potatoes until soft but not breaking up - about 20 minutes.
  2. Drain the potatoes in a colander and put to one side.
  3. Place the milk and butter in the pan used to boil the potatoes, return the pan to the heat and warm gently until the butter has melted into the milk.
  4. Add the potatoes and mash using a potato masher. 
  5. Mix with a wooden spoon until light and fluffy.
  6. Season with salt and pepper to your taste. Keep warm.
  7. In a pan cook the sausages, when ready remove and keep warm. 
  8. Heat up a chargrill, drizzle the pak choi with a little rapeseed oil and gently chargrill it to your liking.
  9. In the same pan that you cooked the sausages, add the onions and garlic, cover the pan and leave to sweat for a few minutes, shaking the pan occasionally.
  10. To speed up the cooking process, add a little water, cover and leave the onions to steam, you might need to repeat this process a couple of times. 
  11. When the onions are cooked, sprinkle with the cocoa; add the honey and a little water to create the sauce.
  12. Adjust the seasoning.
  13. To serve, place some of the mash in the plate, top with 2 pieces of pak choi per person, followed by three sausages, drizzle with the onions and sauce and serve.
