The Ultimate Roast Chicken

Alex shows how to make the ultimate roast chicken, with some great accompaniments of straw potatoes, stuffing, chicken livers, bread sauce and gravy

Ultimate Roast Chicken:

  • Large Red Tractor Chicken
  • 2 Garlic bulbs
  • Oil for drizzling
  • Salt and Pepper for seasoning 
  • Take whole chicken & season well
  • Place on rotisserie or into roasting pan with halved garlic bulbs and drizzle with oil and season with salt and black pepper. Wash hands & board after handling raw chicken
  • Roast for… 3lb/1.2kg for about 1.5 hours at Gas 4-5 180C 350F – Always check that the chicken is thoroughly cooked, piping hot throughout and that the juices run clear and aren’t pink.  Use a food probe to check … should reach 73+C
  • When cooked allow to stand briefly before carving and serve with heaps of straw potatoes, stuffing balls, gravy, bread sauce and chicken livers
Straw Potatoes:

  • 4 large Red Tractor potatoes, peeled
  • Oil for frying
  • Spring onions, sliced for garnish 
  1. Very thinly slice potatoes and then cut into very thin match stick fries (Use a mandolin slicer if you have one) –
  2. Dry potato sticks in a clean tea towel.
  3. Pour oil into medium sized saucepan so that there is a height of about 5cm of oil.  Carefully heat oil – Drop one potato stick into oil and when it sizzles then oil is ready.
  4. Add sticks a few at a time and cook until golden brown. 
  5. Drain on kitchen paper. Sprinkle with spring onions and serve. 
Stuffing Balls:

  • 450g Red Tractor Sausage meat or sausages with skins removed
  • 1 onion, finely chopped
  • 50g breadcrumbs
  • Fresh sage, thyme and rosemary, chopped 
  1. Mix together in large bowl: Sausage meat, onions, breadcrumbs & herbs
  2. Shape into balls and place on a baking tray
  3. Cook for about 25-30 minutes until golden brown. 

  1. Using chicken stock, available in another Red Tractor recipe
  2. Pour into pan &gently simmer to reduce until desired consistency – this will take at least 15 minutes.
Bread Sauce:

  • 1 onion, peeled
  • 10 cloves
  • 500ml Red Tractor milk
  • Grated nutmeg
  • Pinch ground cinnamon
  • Double cream
  • 100g breadcrumbs 
  1. On a board – stud a peeled onion with cloves
  2. Place into a small saucepan with milk, nutmeg, cinnamon and a splash of cream – simmer for about 10 minutes
  3. Remove onion and add breadcrumbs and simmer for 4-5 minutes until thick and creamy.
  4. Finish with a splash of cream & serve. 
Chicken Livers:

  1. Heat a small knob of butter in small frying pan
  2. Season livers and add to the pan – Cook for 3-4 minutes & serve.
