Chicken Stock

Ingredients:
  • 1 Red Tractor Chicken carcase and leftover cooked chicken
  • Sufficient water to cover carcase
  • Juice from 1 lemon
  • 1 onion, cut into quarters
  • 2 carrots, cut into 4 pieces
  • Small handful parsley, roughly chopped
  • 3 sprigs thyme, leaves removed
  • 2 bay leaves 

Method:
 
  1. Place cooked carcase and leftover chicken into a large pan.
  2. Add enough water to cover chicken. 
  3. Add lemon juice, onion, carrots and herbs. 
  4. Bring to the boil & then lower heat to simmer for at least an hour.
  5. Cool & store covered in fridge for 1-2 days 
  6. Use as needed … It’s great for soups, risottos,  sauces and gravy.
