Chicken Escalope Sliders

Serves 4

Ingredients:
  • 4 Red Tractor Chicken breasts
  • Seasoning
  • Oil for frying
  • Butter for frying
  • 2 Heads of Pak Choi, thinly sliced
  • 2 large handfuls of baby spinach
  • 2 large handfuls of baby kale
  • 4 Brioche buns
  • 4 thick slices of soft type cheese 


Method:
 
  1. Place chicken breasts on a  board – cover with a sheet of non-stick baking paper & using a rolling pin bash until about  2cm thick – Season escalopes with salt & black pepper. 
  2. Make sure you wash hands & equipment thoroughly after preparing raw chicken.
  3. Heat large frying pan on hob with 1 small spoonful of oil and a small knob of butter.
  4. Fry on both sides for 3-4 minutes until cooked thoroughly – check chicken is steaming hot & no pink juices – all clear
  5. To make go go greens –Heat large pan with a little oil and butter and  lightly sautee together pak choi, spinach and kale – toss together until lightly wilted. 
  6. Place the cooked escalope on brioche buns, top with ‘go go’ greens and finally top with a slice of soft cheese & brioche lid.
