Chicken Curry

  • Oil for frying
Makes sufficient for family of 4

  • Oil for frying
  • 2 small onions, finely chopped
  • 2 large cloves garlic, roughly chopped
  • 450g Cooked leftover Red Tractor chicken
  • 2-3 tablespoons Madras curry paste
  • 500g Tomato passata
  • Chicken stock
  • Fresh coriander leaves
  • Olive oil for drizzling
  • Natural yogurt & mango chutney 

  1. Heat a spoonful of oil in a large shallow pan and fry off onions and garlic until softened.
  2. Add cooked chicken and curry paste – stir well to coat chicken in the curry paste.
  3. Add the passata and a little splash of stock.
  4. Bring to the boil.  Spoon into a large ovenproof dish and place in a preheated oven Gas 4-5 180C 350F and cook for about 30 minutes until thoroughly heated through and piping hot.
  5. Remove from oven – drizzle with olive oil and scatter with coriander leaves.
  6. Serve with halved baked jacket potatoes, yogurt & mango chutney.
