Winter Beef and Vegetable Hot Pot

After arriving home and taking off that winter coat, why not try out our beef and vegetable hot pot recipe to keep yourself warm?

Ingredients:

  • 450g Red Tractor braising beef, trimmed and cubed
  • 450g Red Tractor potatoes, peeled and sliced
  • 2 Red Tractor parsnips, peeled and sliced
  • 2 Red Tractor carrots, peeled and sliced
  • 400g can tomatoes
  • 2 Red Tractor parsnips, peeled and sliced
  • 2 Red Tractor carrots, peeled and sliced
  •  400g can tomatoes
  •  600ml beef stock
  •  1tbsp corn flour
  •  1 tbsp gravy browning (optional)
  •  2tbsp Red Tractor parsley
  •  2tbsp Red Tractor thyme
  •  25g Red Tractor butter
  •  2 tbsp olive oil
  •  600ml beef stock
  • 1tbsp corn flour
  • 1 tbsp gravy browning (optional)
  • 2tbsp Red Tractor parsley
  • 2tbsp Red Tractor thyme
  • 25g Red Tractor butter
  • 2 tbsp olive oil

Method:

  1. Pre heat the oven to 325°F, 150°C, gas mark 3. Heat the oil in a large ovenproof casserole. Add the beef and sizzle for a few minutes. Transfer the beef into a bowl, set aside until ready to use.
  2. Layer up the vegetables, beef, canned tomatoes, Red Tractor parsley and Red Tractor thyme in the casserole, seasoning as you go. Pour the stock into a saucepan and bring to the boil.
  3. Mix the corn flour with a little water and add to the stock with the gravy browning. Stir and simmer for a few minutes. Pour over the layered ingredients.
  4. Top with a layer of sliced potatoes and parsnips and butter. Cook, covered in the oven for 2 hours. Serve garnished with Red Tractor thyme.
