Perfect Steak and Chips with Homemade Ketchup

Find out how to cook steak with homemade tomato ketchup and chips, that are sure to impress your friends and family.

Serves: 4

Cooking Time:  40 minutes

Ingredients: 

For the chips:
  • 6-8 large potatoes, such as Maris Piper, King Edward or Desirée (about 1.5kg)
  • 2-3 tbsp sunflower oil 

For the steak:
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • Seasoning
  • 1 tbsp olive oil
  • 4 x beef sirloin steak

For the homemade ketchup:
  • 170g tomato paste  
  • 50g brown sugar
  • ½ tsp mustard powder
  • ½ teaspoon salt
  • ¼ tsp mixed spice
  • 2 pinches of allspice
  • 1 pinch of cayenne pepper
  • 80ml water
  • 4 tbsp white wine vinegar

Method:

  1. For the ketchup, combine all ingredients in a large mixing bowl. Stir until the sugar is completely dissolved.
  2. Put in an airtight container and store in the fridge overnight for the flavours to develop. This ketchup recipe should last for three weeks in the fridge.
  3. Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
  4. For the chips, peel the potatoes and square into rectangles, then cut them into chips about 1cm thick.  Put the chips into a large pot of salted cold water, and bring them to the boil. As soon as the water comes up to the boil, drain them, and tip them onto kitchen paper or a dry clean tea towel and dry thoroughly.  Tip the dry chips into a large bowl. 
  5. Add 2-3 tbsp sunflower oil and toss to coat all the chips with a covering of oil. Tip the chips onto baking tray, making sure you do not overcrowd the chips. Bake for 20-30 minutes, shaking every now and again, until the chips are cooked and are an even golden brown.
  6. For the steak: mix together the paprika and cumin.  Rub the steak with a little oil and then massage in the spice rub.  Heat a large griddle pan until hot.   Add the steak and cook according to preference.  For a rare steak, cook for 3-4 minutes each side, for medium, 5 minutes each side and 6 minutes each side for well done.  Timings will vary because the thickness of the meat differs.   When cooked, remove from the heat and cover with foil to rest.
  7. When the steak has rested, serve with the chips, a spoonful of ketchup and a side order of salad.
