Baked Goddess Cheese with Griddled Vegetables

About 1 small cheese between two!
  • 1 small ‘Goddess’ soft cheese or similar individual sized soft cheese
  • Bunch fresh asparagus
  • Bunch spring onions, trimmed
  • Rapeseed oil for brushing
  • Black pepper
  • Items for ‘dunking’: skinny baguette, celery sticks

Preheat oven to Gas 6 200C 400F

Take the cheese and place in a similar sized deep sided ovenproof dish – or place on two pieces of foil and scrunch around the cheese leaving the top exposed.

Place in oven and bake until gooey and soft to touch – about 5-10 minutes.

Take the asparagus and remove any stringy bits with a peeler.  Brush each asparagus spear and spring onion with a little oil and scatter with salt and black pepper.  Place onto a preheat griddle plate and cook until very lightly seared.

Toast the baguette and serve with the melted cheese,   asparagus, spring onions and celery – An Instant Fondue!!
