Seared Asparagus and Gammon Salad

This salad combines seared gammon with an array of fresh produce to create a beautiful salad that is perfect for both a refreshing lunch or to take to a family get together. Even better, it’s really quick and easy to make as well!

  • For the Salad:

    • 225g Red Tractor gammon steaks

    • 450g Red Tractor asparagus

    • 225g Red Tractor cherry tomatoes, halved

    • 4 Red Tractor baby gem hearts

  • For the Dressing:

    • 5tbsp ready prepared light vinaigrette

    • 100g Red Tractor mature Cheddar cheese

    • Red Tractor basil leaves

    • Red Tractor thyme

  1. For the dressing, mix the light vinaigrette, Red Tractor mature cheddar cheese, Red Tractor basil leaves and Red Tractor thyme.
  2. Grill the gammon steaks for 15 minutes, turning once. Cut into wedges.
  3. Sear the asparagus on a ridged griddle pan for 10 minutes.
  4. Toss together, lettuce, quartered tomatoes and gammon.
  5. Drizzle with dressing and serve in bowls with the asparagus.
  6. Using a potato peeler create shavings with the cheese and arrange over the salad
